Albacore is one of the smallest members of the tuna family and a highly migratory fish that roams all the world’s tropical and temperate oceans. A metallic, dark blue back and dusky to silvery white belly distinguishes the Albacore tuna. Albacore has a delicate flavor and famously light pink flesh that turns ivory or creamy white when cooked and firms up into delicious, flaky pieces. Albacore is excellent on the barbecue, baked, canned, raw or deep fried; this fish is for everyone! Check out our blog post on how to cook fresh tuna steaks.
