Tomatillo Corn Sauce or Salsa

(serve warm over grilled meat or veggies, or cold with tortilla chips)

Ingredients:
-2 lbs tomatillos, husks removed and rinsed
-2 tb fresh lime juice
-2 pasilla peppers
-1/2 red onion, diced
-3 corn on the cob
-1 jalapeno
-1 bunch fresh cilantro
-salt and pepper
Directions:
– On a large grill, grill the tomatillos, pasilla peppers, corn, and jalapeno until browned and softened. Remove from the grill and set aside to cool slightly.
-Finely dice the red onion and set aside in a large bowl.
-Once corn is cooled enough to handle, cut grilled corn into the bowl with diced red onion.
-In a large blender or food processor, place the tomatillos, cilantro, salt, pepper and lime juice. Remove seeds and stem from all peppers and place them into the blender.
-Blend until smooth and then pour into bowl with diced onion and corn. Mix well and enjoy warm over grilled meats or veggies or cold as a delicious salsa.
