This Week’s Fresh Fish Offering

~ Vermillion Rockfish ~

Rockfish is a common term for several species of fish, referring to their tendency to hide among rocks. Vermilion Rockfish, a red variety of Rockfish, is sweet and rich in flavor with a fine, firm texture and large, meaty flake. Favored especially in Asian cuisines, these fillets can be grilled, sautéed, broiled, baked, braised, and steamed.
