We’re so grateful to receive some unexpected delicious first harvest arrivals this week. Tender organic red chard and Albion strawberries from Frank with MG Farms, along with Brussels sprouts from Cal Poly students with the CTE program in Santa Maria. These fresh finds make meal prep both easy and inspiring. Easy meal suggestions: sautĂ© your red chard with garlic and olive oil for a simple side. I personally love a chard salad. Tear the leaves into bite size pieces, toss with fresh salad ingredients like carrots, tomatoes, celery and more. I typically add Costco or Trader Joes marinated artichoke hearts, sun-dried tomatoes in olive oil, drizzle a little of the marinade into the salad, dress with a squeeze of Meyer lemon and season with fresh cracked sea salt and pepper. The perfect salad!Â
Another favorite, roast your red potatoes after tossing with a little olive oil, red pepper flakes, fresh cracked s&p on 400 about 35 minutes. Top with some garlic and herbs along with fresh parm and roast to perfection!
For a super easy treat, skewer and bacon wrap your brussels sprouts and grill. Another delish way to enjoy brussels, toss with olive oil, your favorite seasonings and caramelize them on a sheet-pan in the oven roasted.
Sweet treats, take your fresh strawberries, slice over salads, yogurt, or warm oatmeal. If you’ve not tried our fresh eggs from Rosemary Farms, we highly recommend trying them! This past week we compared them to store bought, the taste is by far superior! Making fresh frittatas is a real treat!Â
