This recipe traditionally uses the more common orange sweet potatoes, but it is fantastic with Japanese murasaki sweet potatoes, as well. This dish is truly such a treat and so easy to prepare.

INGREDIENTS
- 1 can (15 ounce) sweet potato puree – (fresh is better! use 1 large sweet potato or 2 small to equal 15 oz can)
- 1/2 c. ricotta
- 1 tsp. lemon zest
- 1/2 tsp. sugar
- Pinch nutmeg
- Kosher salt
- Round dumpling wrappers (about 15)
- 2 tbsp. canola oil, optional, for frying
Sage Brown Butter
- 4 tbsp. unsalted butter
- 8 sage leaves, finely chopped
- 2 tsp. lemon juice
