Strawberry & Nectarine Crostini’s

Ingredients
Crostini’s:
- Baguette
- Extra virgin olive oil
- Garlic powder
- Freshly ground black pepper (to taste)
- Goat cheese or mascarpone
Fruit Topping:
- 1/2 cup Strawberries
- 2 Nectarines
- Handful of basil leaves
- Balsamic syrup (or balsamic vinegar)
Directions
Preheat the oven to 350F.
Slice a baguette (on a bias) about 1/4-inch thick. Spray/Brush with extra virgin olive oil, sprinkle with garlic powder, and top with freshly ground pepper. Toast in the oven for approximately 8-10 minutes (until lightly golden). Rotate the tray half way through to ensure proper toasting. Remove from the oven once toasted and allow the crostinis to cool for 5 minutes.
While the baguette slices are toasting, dice the strawberries and nectarines into 1/4-inch cubes. Slice basil leaves into ribbons. Mix the fruits and basil together. Add a pinch of salt and black pepper to taste.
Once the crostinis are cooled, spread goat cheese / mascarpone on each crostini slice. Then, arrange the summer fruit-basil mixture onto each baguette slice. Finish by drizzling balsamic syrup (or vinegar) and extra virgin olive oil. This summer dish is great for any meal of the day!
