INGREDIENTS

  • 1/2 cup cider vinegar
  • 1/2 cup water
  • 3/4 cup very thinly sliced red onion
  • 3 cups thinly sliced red cabbage
  • 1 tablespoon fresh lime juice
  • 2 tablespoons olive oil, divided
  • 1 teaspoon kosher salt, divided
  • 3/4 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 12 ounces boneless, skinless chicken breast tenders
  • 8 (6-inch) corn tortillas
  • 1 avocado, peeled and sliced
  • 1/2 cup plain 2% reduced-fat Greek yogurt
  • 4 teaspoons pepitas
  • Fresh cilantro leaves (optional)
  • Sliced radishes (optional)
