A lot of people who don’t like eggplant, don’t like it for it’s soft and squishy texture. If you’re one of those people this simple baba ganoush recipe is for you! This flavorful, hummus-like spread is perfect for sandwiches and dipping your veggies in and it’s a great way to use up your eggplant!

- 1 medium eggplant
- Sea salt
- Olive oil (for roasting)
- 1 large clove garlic (grated or finely minced)
- 2-3 Tbsp lemon juice (1 medium lemon yields ~3 Tbsp juice)
- 2 Tbsp tahini
- 2 Tbsp fresh cilantro, parsley or basil (optional // chopped)
