Healthy, quick and easy salad with romaine, cucumbers, tomatoes and avocado with a light oil and lemon dressing

Ingredients:
Salad:
  • 1 large romaine
  • 1/3 cup cilantro
  • 1 avocado
  • 1 cup cherry tomatoes
  • ½ English cucumber
  • ½ red onion
Dressing:
  • 4 Tbsp olive oil
  • 1 1/2 – 2 Tbsp fresh squeezed lemon juice*
  • 1/2 – 3/4 tsp salt
  • 1/8 – 1/4 tsp pepper
