Rice Cooker Delight with Fava and Bok Choy
This is a wonderful rice cooker meal, just put everything in your rice cooker and let it do it’s thing while you do yours!
Growing up I remember my Mama, Dad, Grandmother, Uncle & Aunt always making these delicious rice cooker meals, they would simply add the rice with any vegetables that were hanging around in the refrigerator. They would dice up some meat, throw it in there with a splash of dry cooking wine some herbs and spices and we would have an amazing meal ready for when we got home from school, work or church. It was super easy and amazing! You can pretty much much add anything you want to this as long as you have the right water and rice ratio. This is one of my favorites, I hope you enjoy it as I sure do!
Ingredients:
Rice ratio is 1 cup rice 1 cup water, unless you’re using brown rice then use 2 cups water to 1 cup rice. Rice washed 2 to 3 times until water comes out clear, 1 cup. Soy sauce 2 tablespoon
Marin 1 tablespoon
Coconut sugar 1 tablespoon
Oyster sauce 1 tablespoon
Sesame oil 1 tablespoon
Water 1 cup unless using brown rice… remember the 2 to 1 ratio with brown rice.
Garlic minced 3 cloves
Ginger minced 1 teaspoon
Shiitake mushrooms or any mushroom of your choice 4 sliced
Bok choy one head chopped
Fava beans 3 tablespoons
Vegan ham 2 tablespoons medium diced
Red pepper 2 tablespoons medium diced
Final Presentation:
Sesame seeds 1 teaspoon
Chili garlic sauce 1 teaspoon
Instructions:
Add rice and water seasonings and mix well on top add the vegetables and vegan ham cover cook according to rice cooker, usually about 30 minutes… once that little bell rings, let it sit for 10 minutes before removing lid, mix everything until you have a medley of yummy goodness! Finally add sesame seeds and drizzle the chili garlic oil on top.
I love adding some delicious sliced scallions and lime drizzle to mine. You can also add more soy sauce, garlic, corn, vegan sausage pretty much anything else that suits your fancy. Enjoy!

All in all, whether you eat them raw out of the boc, steam them, sauté them, throw them in your rice cooker, these amazing beans are for me a super food and I absolutely love them!
