Parsley root is a rare and wonderful treat that is fantastic for purifying your blood, helping with digestion, and healing your liver. It tastes great in salads, soups, and roasted with chicken, but it is definitely most exciting when made into fries! Parsley root has a delicious herb-y flavor and gets nice and crisp when baked, making for a satisfying and guilt-free snack.

INGREDIENTS

Parsley Root Fries
Serves 2-3
3 large parsley roots – about 1.5 lbs / 700 grams
high-heat cooking oil
sea salt
freshly ground black pepper
fresh rosemary (optional)

Roasted Tomato Ketchup

Makes 2 cups
Ingredients:
10 medium-sized tomatoes – about 2.2 lbs/1 kg
high-heat cooking oil
sea salt
freshly ground pepper
1 large onion, chopped
3 cloves garlic, minced
3 star anise
3 bay leaves
1 tsp. ground coriander
pinch of chili flakes
1/8 cup balsamic vinegar
apple cider vinegar to taste
