Join us on April 23rd Make everyday Earth Day

We’re back! After a two year hiatus, due to Covid-19, the San Luis Obispo County Earth Day Fair will take place in-person once again. Mark the date: April 23 and join in the education celebration from 11am to 4pm at Laguna Lake Park in San Luis Obispo. Bring the family, meet up with your friends. This event is for all ages and admission is free.

Over the decades Earth Day events have become the front line for raising public awareness about the health of the planet and action we can take to protect and preserve the environment for future generations. The effects of climate change are becoming increasingly dangerous and are now recognized around the world. It is essential that each human on the planet take immediate action to become part of the solution by reducing our footprint.

As host of the San Luis Obispo County Earth Day Fair our mission is to raise awareness and demonstrate to the public how our individual actions contribute to the health of the planet. It is up to each one of us to protect and preserve our natural resources for present and future generations.

Learn how you can reduce your footprint, be the change at the SLO County Earth Day Fair. Bring your family, friends, work associates or neighbors — spread the word.  The faster we educate and activate the public the faster we can turn this around.

Get involved!  Volunteer. Have a booth, become a Sponsor or donate to the cause.

Sprouted Chickpea Hummus

• 2 cups sprouted chickpeas in this week’s fresh harvest boxes

• 2 heaping tablespoons tahini

• 2 heaping tablespoons extra virgin “Lone Oak or Wind Dance Farms Olive Oil”

• 2 large cloves garlic

• juice of 2 medium lemons with zest

• ¼ cup purified water, + more as needed to thin

• 1 tablespoon cumin

• 1/2 cup chopped parsley leaves or cilantro

• Dash of cayenne pepper

• Himalayan or sea salt to taste.

Place all your ingredients into your food processor/blender and blend until creamy. Taste for flavor adding anything extra you like. If adding more water, add 1 tablespoon at a time until desired consistency.

When plating, drizzle some extra virgin cold pressed olive oil, sprinkle some cayenne pepper and top off with some pomegranate seeds and watch your hummus be transformed into a work of art! Enjoy with bread, crackers, crudité or on top of a salad instead of dressing.

Sprouted Chickpeas – What to Know!

Sprouted chickpeas (also known as sprouted garbanzo beans) are a great choice for plant-based protein. They are high in fibre, an excellent source of protein and a good source of iron. Their tender, buttery texture and distinct earthy flavour is perfect for a wide variety of dishes.

Sprouted chickpeas have already been through a slow soaking, sprouting and drying process. This makes preparation much quicker and more convenient, no thinking ahead needed! Sprouting actually goes a step further than soaking to aid in digestion, reduce phytic acid, enhance their taste and texture, and cut their cook time in half. Cooking sprouted chickpeas is very easy, simply boil in water. If you’re looking for alternatives, like cooking in a pressure cooker, check out our cooking guide.

They are wonderful whole, pureed or roasted. Use for delicious creamy hummus, hearty salads, soups, curries and more. Roast with spices and enjoy as a crunchy snack or salad topper. You can even blend them with your morning smoothie to add a thick, creamy texture and a boost of nutrition. You can find sprouted chickpea recipes here.
