Healthy and Delicious Diakon Radishes

Hey there SLO Veg Foodies!
When I received confirmation this past week that the wonderful Daikon Radish was available to share this week, I had to order it!  This root takes me back, enjoying happy memories of attending Farmer’s Market on Saturday’s at Madonna Plaza.  My first stop was almost always with our farmer, Osaih Galve’s stand.  Every week, he would bring some of the most interesting Asian salad mixes along with fruits and veggies not commonly found at the markets. I’m sure a number of you still recall meeting him in person had you frequented Saturday markets in SLO and Arroyo Grande.  Osiah is one of the most giving and loving sole’s I have ever met. He would share so many gifted samples, just so you’d try them, and come back next week to buy more.  Unfortunately, Osiah is no longer frequenting markets do to health reasons. Maria, his wife, is still attending Thursday evening SLO Farmers Market.  We truly miss Osiah!  So, here’s to you this week to pay homage to Osiah, we’re offering the wonderful Daikon Radish!
Osiaha’s favorite way to enjoy his radishes was to slice, dice, or grate, then squeeze fresh lemon juice over the top, and toss with soy sauce. Add a little salt and pepper to your liking. Ready to eat right away.  Let me tell you, from my taste experience, it’s savory, mouth watering and completely delicious to the pallete. I hope you enjoy it as much as our family does.

Culinary Uses:

Daikon can be enjoyed raw, pickled, or cooked. It’s an integral ingredient in Asian cooking, though it lends itself to many cuisines. Here are some interesting ways to add daikon to your diet:

Grate raw daikon over a salad for a nutritious, crunchy topping.
Add daikon to stir-fries to kick up the flavor.
Make Korean cubed radish kimchi (Kkakdugi) using this recipe.
Use daikon in soups and stews in place of carrots.
Steam daikon and top it with a drizzle of olive oil, salt, and pepper for a low-calorie side dish.
Mix daikon with cubed potatoes and carrots and roast them.
Serve raw, sliced daikon alongside other veggies with a tasty dip for a healthy appetizer.
Make traditional Chinese daikon cakes using this recipe.
Use a spiralizer to make daikon noodles and toss them in a homemade peanut sauce.
Add daikon to veggie spring rolls for a crispy texture.

Incorporate daikon into Asian dishes, such as curries and soups. Note that all parts of the daikon plant can be eaten, including the leafy green tops, which can be added to sautés and soups. Use them as you would use more commonly enjoyed sprouts, such as broccoli and alfalfa varieties.

Vegan Bibimbap with Carrots and Spinach
