We hope your week is off to a great start!  This warmer weather is greatly welcomed, and definitely a plus for all of the new items coming in your harvest boxes!  This past weeks colder temps and frost impacted many of our farmers crops. Some lost delicate items such as fresh herbs, spinach and salad mixes which is a bummer as we know how much time and energy it takes to procure fresh fruits and veggies. We’re looking forward to receiving many new springtime harvests. English peas and hot house tomatoes coming soon!  Cheers to Spring!

This Week’s Featured Farm ~ Mt. Olive Organic Farm in Paso Robles:

Located in the quaint town of Paso Robles, California, Mt. Olive is a certified organic family farm that provides organic healthy food, while benefiting the environment and all living things around. You might know us for our tasty olives, rich olive oil, grass-fed meat, seasonal vegetables, and juicy fruits (apples, pears, grapes, cherries, strawberries, goji, plums, persimmons… just to name a few).

We use sustainable practices like diversified farming, vermiculture, composting with nitrogen-fixing plants, and we raise our animals outdoors without antibiotics and hormones. By working in harmony with nature, we strive to restore the original realm of Eden where everything was poison-free and toxin-free. Come and enjoy the best nature has to offer!

Mt. Olive Sprouts:

Nature works in amazing ways. All the nutrients needed for a new plant to grow are contained in the seed. These nutrients remain inactive until sprouted. Once sprouted, the sprout becomes a nutrient powerhouse with highly concentrated sources of vitamins, minerals, enzymes, amino acids, and other nutrients that are hard to find elsewhere. Many times eating the sprout is more nutritious than the full-grown vegetable.

Rachael’s Grilled Bok Choy

This weekend was a fun treat for me while foraging through my excesively full veggie refrigerator. It was Saturday night and I was in the mood to grill some veggies and came up with this simple savory,mouth watering, bok choy medley. This recipe is so simple to make, and is excellent grilled or eaten raw. It was a flavor bomb explosion with every bite ~ wow! It’s definitely on my list to make again this week with our fresh harvested bok choy.  Bon Appetit!

Ingredients:

Bok Choy, Portobello Mushrooms, Garlic Cloves (if desired), Sweet Baby Tri-Colored Bell Peppers, Meyer or Eureka Lemon, Olive Oil, Soy Sauce, Marintated in Oil Artichoke Hearts (costco has the best), Fresh Cracked Salt & Pepper.

Preparation:

Slice your box choy, mushrooms, garlic, tri-colored sweet peppers into thicker bit size pieces.  Use as little or as much as you like of all items. I tend to mix up as much as I have as I LOVE leftovers. Place all ingredients into a large bowl.  Drizzle with olive oil, soy sauce, and marinated artichoke juice. I free-style it, no measuring. Squeeze a full lemon over the mixture. Then add salt and pepper.  Mix it all up and you’re set!  I tend to like a lot of juice for quick saute with left over raw veggies.  The marinade is great for re-use on salads. The soy and lemon juice are the key elements for the flavor I desire.

Osiah Galve our Asian farmer highly recommended the lemon and soy to me years ago, and boy was he right.  You may remember Osiah from Farmers Market in SLO at Madonna and the AG Market a few years back.  He had the best Asian greens and would load ya up with all kinds of samples so you’d come back every week.  He’s no longer attending markets for health reasons and is sorely missed by many I’m sure.

Grilling:

Heat your grill, place a grill pan with holes in it over the burners, brush your pan with a little olive oil.  When everything is hot, pour veggies into pan, spread them out and grill till lightly browned on all sides.  I love mine Al Dente.

Rosemary Kissed Broccoli Lovers Potato Salad

INGREDIENTS:
1 cup broccoli flowers &. Cauliflower florettes steamed
1/2 cup vegan mayonnaise (use regular mayonnaise if you don’t have a vegan option)
2 cups roasted potatoes cut into 1 inch squares
Juice of 2 lemons
zest of 2 lemons
4 tablespoons fresh rosemary chopped
4 cloves garlic chopped
I/8 cup roasted pumpkin seeds
3 Tablespoons sunflower seeds
3 tablespoons Himalayan pink salt or sea salt
4 tablespoons coldpressed extra-virgin olive oil
1 tablespoon freshly ground white pepper

Steam broccoli and florettes until tender but still with a crunch.
Roast potatoes At 350 degrees for 30 to 40 minutes until nice and golden brown.
Chop rosemary and add to food processor along with garlic, salt until nice and mixed. Add olive oil and mayonnaise until mixed.
In a large bowl mix all ingredients together and voilà! In addition you can use more rosemary, garlic or seasonings to taste. Let food be thy medicine, and medicine be thy food!
