Thyme Kissed Potato Leek Soup

◦ Potatoes 8 medium russet potatoes, peeled and thinly sliced
◦ Leeks 6 to 8 fat leeks, white parts only, cleaned and sliced crosswise
◦ 1 cup (1 stick) unsalted butter
◦ 5 cups vegetable broth
◦ 2 cups half-and-half
◦ 3 tablespoon coarse salt
◦ Freshly ground white pepper
◦ 4 cloves garlic
◦ 1 cup shredded cheese jack

Melt butter in a large saucepan over medium heat. Add leeks and cook, stirring, until soften, about 10 minutes. Deglaze with sherry. Add potatoes, salt, thyme and broth; simmer until potatoes are tender, about 30 minutes.

Transfer mixture to the jar of a blender or bowl of a food processor; blend until smooth. Add half-and-half. Return to stove and gently heat over medium-high heat until warmed through. Add cheese and stir in. Season with white pepper.
Serve garnished with fresh thyme.

Lebanese Tomato Pasta

Last night we hit the lotto! Lovely Linda prepared and shared this beautiful pasta dinner with our family. You’ve got to try this “fantastic recipe” it is delicious. The cinnamon is a total game changer.  I would have never thought to add it with a tomato based sauce. Enjoy!  RachaelINGREDIENTS:

2 cups chickpea pasta or your favorite pasta preference
Tomatoes 2 cups diced
Mushrooms 1 cup chopped
Shallots 1 large chopped
Leeks 2 chopped
Garlic 4 cloves chopped
Walnuts 1/4 cup chopped
Parsley 1 bunched chopped
1/8 cup green olives chopped
White wine 1/8 cup
Lemon 2 juice
Zest of 2 lemons
Spinach 2 cups
Olive oil cold pressed extra virgin
Oil sunflower 4 Tablespoons
Sweet basil 1 tablespoon
Oregano 1 tablespoon
Lavender 1/8 teaspoon
Cinnamon 1/8 teaspoon
Cayenne pepper dash
Sea salt 1 tablespoon
Black pepper fresh 1 Teaspoon
Honey 1 Tablespoon

Instructions:
Add sunflower oil to hot pan, add mushrooms, cook 3-5 minutes. Add shallots and leeks, cook for 5 minutes or until translucent, deglaze pan with wine, mix well.
Add olives, spices and lemon juice. Cool for 3 minutes. Stir in tomatoes and cook on medium low for about 5 minutes, add garlic, and spices to sauce. Cook for 6 minutes.

Meanwhile cook pasta as directed. Once pasta is ready add spinach, sauce, black pepper and olive oil. This recipe pairs amazing with bread! We recommend Wild Bread Co Sourdough
