This Week’s Fresh Fish Selection:

Monday: Petrale SolePetrale So
Petrale Sole are considered to be the most flavorful and desirable of Pacific Flounders. They have a mild, delicately nutty, sweet flavor with small, firm flakes. Typical cooking methods: baked, broiled, deep fried, or sauteed.

Tuesday – Friday: Sushi Grade Yellowtail or Sushi Grande Tombo Albacore

Yellowtail is a mild flavored fish with a firm texture. Cooking yellowtail may alter it slightly, but since it is such a fatty, oily fish, you will benefit from either cooked or raw yellowtail. Excellent for searing, grilling, baking or pan frying.
