This Week’s Fresh Catch:

Monday Fish:  Rainbow Trout 
Rainbow trout meat is mild, with a delicate, nut-like flavor. The flesh is tender, flaky and soft. It doesn’t need much enhancing at all, which makes it a very easy fish to cook. 

Recipe Suggestion:
To bring out the best flavor out of trout, use very basic ingredients : olive oil, salt and pepper, minced garlic, and fresh lemon slices. That’s it! Bake on a cookie sheet at 400 degrees for 15 minutes.

Tuesday – Friday Fish: Black Cod
Black Cod Texture: Smooth, velvety texture and large, yet delicate, flakes. Flavor: Rich, satiny sweet, buttery taste courtesy of the high oil content. Perfect serve: The high oil content of sable fish makes it ideal for smoking – it won’t lose its flavor or texture in the process.
