Sushi Grade Yellowtail
Yellowtail is excellent when baked, seared, or fried. Yellowtail fillets can have a dark muscle line along the edge. Cooked meat is white and firm with a sweet, mild flavor. The high oil content gives the flesh a buttery texture.

Sushi Grade Halibut
Halibut is the perfect go-to fish for baking, grilling and sauteing. It’s a lean fish with mild, sweet tasting white flesh, large flakes and a firm but tender texture. It’s a great fish for people who don’t like the strong flavor of most oily ocean fish. Because of its leanness it becomes dried-out if overcooked.
