This Week’s Fresh Fish:
Monday – Wednesday Selection:
Sushi Grade Yellowtail or Albacore Tuna
Tuna fillets can have a dark muscle line along the edge. Cooked meat is white and firm with a sweet, mild flavor. The high oil content gives the flesh a buttery texture.
We hope you love it, we ordered it special for you!

Gambit with Giovanni’s Fish Market Recipe Ideas:
Yellowtail and Albacore are both excellent when baked, seared, or fried. Yellowtail fillets can have a dark muscle line along the edge. Cooked meat is white and firm with a sweet, mild flavor. The high oil content gives the flesh a buttery texture. Both are excellent when paired with Asian recipes that include: teriyaki, miso, or ponzu marinades. Add a quick 60 second sear on both sides, you’re all set. You may want to save a little marinade to top fish after searing. Serve over a bead of sauteed bok choy, eggplant, any other veg you love.
