Kalamata Olive Tapenade

• 1 cup chopped Kalamata olives
• 3 garlic cloves chopped
• 1 teaspoon sea salt
• 1 tablespoon parsley or basil
• 1/2 cup virgin cold pressed olive oil.
• 1 Lemon zest
• 1 teaspoon fresh ground pepper

Mix all together, adjust seasonings and enjoy over delicious bread, salad or grilled veggies!

These delicious and beautiful dark purple olives named after the city of Kalamata in the southern Peloponnese, Greece are rich in oleic acid, a type of MUFA linked to improved heart health and cancer-fighting properties! They’re also a good source of iron, calcium, copper, vitamins A and E.

Raw Sprouted Chickpea Hummus 💛

• 2 cups sprouted chickpeas
• 2 heaping tablespoons tahini
• 2 heaping tablespoons extra virgin olive oil
• 2 large cloves garlic
• juice of 2 medium lemons with zest
• ¼ cup purified water, + more as needed to thin
• 1 tablespoon cumin
• 1/2 cup chopped parsley leaves or cilantro
• Dash of cayenne pepper
• Himalayan or sea salt to taste

Place all your ingredients into your food processor/blender and blend until creamy. Taste for flavor adding anything extra you like. If adding more water, add 1 tablespoon at a time until desired consistency.

When plating, drizzle some extra virgin cold pressed olive oil, sprinkle some cayenne pepper and top off with some pomegranate seeds and watch your hummus be transformed into a work of art!
Enjoy with bread, crackers, crudité or on top of a salad instead of dressing.

Sprouted chickpeas, also known as sprouted garbanzo beans, are a nutrient-rich ingredient for soups, salads or as a delightful snack. A fresh and light flavor with a hint of earthiness that goes well for a powerfully flavored and delicious meal! Sprouted chickpeas are rich in vitamins and minerals, providing a substantial amount of nutrients with each serving!
One serving of sprouted chickpeas contains 105 milligrams of calcium, 115 milligrams of magnesium, 366 milligrams of phosphorus, 875 milligrams of potassium, 557 micromilligrams of folate and 67 international units of vitamin A. It also contains trace amounts of iron, sodium, vitamin C, thiamin, niacin, vitamin B-6 and vitamin K.

A primary benefit of consuming sprouted chickpeas is their high protein content and low level of fat, making them an ideal meat replacement for vegetarians and individuals looking to make their diets healthier.

Cilantro Chimichurri Sauce

This is a delightful and super healthy sauce that can be added to just about anything, from salads to grilled vegetables, meats, breads and soups!• 1/2 cup olive oil
• 2 tablespoons lime juice and zest
• 1/2 cup finely chopped cilantro
• 3-4 cloves garlic , finely chopped or minced
• 2 small red chilies , or 1 red chili, deseeded and finely chopped (about 1 tablespoon finely chopped chili)
• 3/4 teaspoon dried oregano
• 1 level teaspoon coarse salt
• pepper , to taste (about 1/2 teaspoon)Mix all ingredients together in a bowl. Allow to sit for 5-10 minutes to release all of the flavours into the oil before using. Ideally, let it sit for more than 2 hours, if time allows.
Finely chop your cilantro before you start. If you don’t have enough, grab a bit more, and chop again until you have the right amount. If you like the strong flavour of garlic, use 4 cloves, If you like milder garlic, start with 2 cloves; mix it all in and allow to sit for a few minutes. Then, taste test. If you’d like more, add more.
The beauty of this is Chimichurri can be adjusted to your taste so add more salt, more pepper, less or more chili. It’s up to you! Fresh red chili is optional. You an also substitute it with 1-2 teaspoons of dried red chili flakes.

Lone Oak Extra Virgin Olive Oil

SLO Grown Produce planted the Lone Oak olive orchard in 2003, adding Craig and Bruce Smith of the Double SS Ranch to the SLO Grown team. Sustainable farming methods are practiced on olive orchards in keeping with our goal of future organic certification. The trees grow vigorously on south west slopes in Carpenter Canyon. Olives are hand harvested and milled the day after harvest to extract the freshest and highest quality oil.

In 2003 an experimental grove of 60 trees was planted to test several Tuscan olive varietals, natural soil amendments, and drip irrigation methods. We found the Arroyo Grande coastal climate, marine sandstone soils (with fossil scallop shells!), and southwest facing slopes of Carpenter Canyon, a perfect combination to grow vigorous Tuscan varietals. In 2006 we planted our first production grove around our signature “Lone Oak tree”. As of 2016 we have 650 trees.

Our oil is custom milled and pressed locally in Paso Robles at Kiler Ridge , a superb craftsman olive miller. Lone Oak Olive Oil is certified extra virgin every year by the California Olive Oil Council, (COOC). Passing the COOC certified quality control program exceeds international standards for Fresh Extra Virgin Olive Oil.

Lone Oak Olive Oil has a consistent flavor profile, described as a fruity nose and taste, slightly grassy on the palate with a mild pepper at the finish. Our orchard trees are Tuscan varietals: Leccino, Frantoio, Pendolino, Taggiasca, and Maurino. Bon Appétit!
