  • 4-6 medium zucchini’s, peeled into ribbons
  • 1/2 pomegranate, seeds set aside
  • 3 tablespoons slivered almonds, toasted
  • Juice of 1/2 lemon
  • 3 tablespoons olive oil
  • 1 clove garlic, roughly chopped
  • Pinch salt and pepper
