This Weeks Fresh Locally Grown Harvest September 14-18, 2020
Locally grown food contains the most nourishment in the form of vitamins, and minerals when it is grown in fertile, healthy soil. Our bodies absorb and utilize
these nutrients best when they are consumed as close to being picked from that healthy soil, and our bodies naturally know to crave various foods during
different seasons based on our long-standing ecological and ancestral background. Credit to ~ The Well Essentials ~ Reconnecting with Our Food

Fresh Fish for You This Week
Monday & Tuesday Fish: *Swordfish Fillets or Local Black Cod
(black cod for our subscribers who have previously expressed no swordfish)
Wednesday – Friday Fish: *Swordfish Fillets or Local Black Cod or Wild Prawns
(black cod or wild prawns for our subscribers who have previously expressed no swordfish)
Swordfish is one of the meatiest fish you will find; cut into “steaks,” making it ideal for grilling and skewering, as well as other cooking methods that don’t fare well with more delicate fish varieties. The mildly sweet flavor is perfect for the addition of marinades and sauces, and the cooked fish results in a moist, somewhat meat-like texture. The Spruce Eats
Also known as Sablefish and Butterfish, is a gourmet fish with a rich, buttery flavor and delicate, silky texture. Sable is versatile, and its high-fat content makes it forgiving to the novice cook because the fat acts as a buffer against overcooking. Pacific black cod tends to falls apart easily. If you want your result to be more firmly textured, brine the fillets in a salt brine of 1/4 cup of salt to 1 quart of water plus 2 cups of crushed ice for 20 minutes.
Its fat content also makes it a prime candidate for smoking. Excellent raw, pan-roasted, and grilled. The Spruce Eats
