Happy Saturday, friends ☀️

We had the absolute pleasure of touring Javier Martinon’s farm this week, and wow… there is nothing like standing in the fields and seeing the magic firsthand. 🌱

One of our favorite takeaways? Cauliflower is way more dramatic than we ever knew (in the best way).

Did you know that in order to get that beautiful, creamy white cauliflower, the plant has to be extremely well-fed when it’s young? Farmers need it strong and thriving so it can be harvested while it’s still in a rapid growth stage. Timing is everything.

Here’s the wild part: cauliflower can start turning yellow or purple simply from sun exposure while it’s still on the plant. Many people assume the color change means it’s old — but that’s not always the case. In fact, the sun can change its color in just a single day! 😳

When those protective leaves open up and the cauliflower head is exposed, it’s go-time. Harvest has to happen FAST. If farmers wait too long, even by a day, the color shifts and it no longer looks like that classic snowy white we’re used to seeing. This coming week’s cauli may have a little color added. We’ll see!

Seeing that sense of urgency in action gave us such a deeper appreciation for the care, timing, and dedication it takes to bring beautiful produce to our community. Farming really is a dance with nature — and sometimes you have to move quickly when she changes the music.
