SLO Veg Friends and Family,
One of the greatest joys of eating seasonally is getting to celebrate those first harvests that signal summer has truly arrived. This week, we’re especially excited to welcome the first organic Blue Lake green beans, sweet Walla Walla onions, and tender butter lettuce of the season. These are the kinds of ingredients that don’t need much—just a little olive oil, a pinch of salt, and good company around the table.
The butter lettuce is especially beautiful right now grown by Blosser Urban Garden, with delicate leaves that practically melt in your mouth. Toss it with sliced nectarines, a handful of toasted nuts, and crumbles of Central Coast Creamery cheese, then finish with one of our Chaparral Gardens fruit balsamics for a simple salad that tastes like summer on the Central Coast.
Our first harvest Walla Walla onions pair wonderfully with the Blue Lake green beans. Try roasting them together with Yukon Gold potatoes and a drizzle of olive oil, then serve alongside grilled vegetables or your favorite protein. The natural sweetness of the onions caramelizes beautifully and brings out the fresh flavor of the beans. Add a fresh sourdough baguette or rustic boule to the table and you’ve got the kind of simple farm-fresh dinner that brings everyone back for seconds.
And speaking of summer, the peaches and nectarines are starting to shine. We love slicing them over vanilla ice cream with a drizzle of Chaparral Gardens Fuzzy Navel, Raspberry or Blackberry balsamic, or adding them to a fresh spinach salad with creamy cheese and toasted nuts. They also make a wonderful companion to a cheese board built with your favorite Central Coast Creamery selections.
If you’re looking for an easy weeknight meal, consider adding a few extras from the marketplace. A box of Etto Pasta tossed with sautéed Walla Walla onions, zucchini, kale, olive oil, and shaved cheese creates a simple farm-to-table dinner in minutes. Add a dozen organic eggs and you’ve got the makings of frittatas, breakfast scrambles, and hearty vegetable-packed meals all week long.
For breakfast lovers, don’t overlook our bakery favorites. A warm cinnamon roll or slice of sweet bread paired with farm-fresh eggs makes for a weekend breakfast worth lingering over. And speaking of eggs, we have to say it—our organic brown eggs are hands down some of the best we’ve ever tasted. Rich golden yolks, incredible flavor, and the kind of freshness that reminds you just how good simple food can be.
While you’re browsing, don’t miss the Cosmic Crisp apples. They’re truly one of the standout fruits we’re offering right now. Crisp, juicy, and perfectly balanced between sweet and mildly tart, they’re the kind of apple that makes you stop after the first bite and say, “Wow.” Pair them with your favorite cheese, slice them into salads, or simply enjoy them straight from the fruit bowl.
And because our community grows best when shared, we’re excited to offer a special referral gift for a limited time. Invite a friend to join SLO Veg and have them use promo code CHICKS2026 when they subscribe. As a thank you, both you and your friend will receive a complimentary dozen eggs on us.
Thank you for supporting local farmers, local makers, and local food. We love being part of your kitchen and helping bring fresh, seasonal ingredients to your table each week.
Wishing you delicious meals and a beautiful week ahead,
Rachael & The SLO Veg Team
