Hello SLO Veg Family! 

We’ve got some fresh faces in the harvest box and on the team this week! As the days grow shorter, our local fields are slowing their pace — fewer daylight hours mean vegetables take their time soaking up that last bit of sunshine before harvest. Growth may be slower, but the payoff is flavor-packed produce at its peak.
This week’s box features first harvest Fall sweet corn on the cob, perfect for a quick grill or roast in the husk — try brushing it with olive oil, garlic, and a sprinkle of chili-lime seasoning for a little kick. You’ll also find first harvest tender red leaf lettuce, ideal for hearty fall salads, fresh red and gold beets that roast up beautifully for earthy-sweet sides, and a new crop of Blue Lake green beans — crisp, vibrant, and delicious whether steamed with butter and herbs or tossed in a simple sauté with garlic and almonds.
In the kitchen this week, try pairing your produce like this:
Roasted Beet & Red Leaf Salad with goat cheese and toasted walnuts.
Garlic Green Beans & Corn Skillet — a colorful, quick side for any dinner.
Street-Style Corn Salad with diced peppers, cilantro, and a squeeze of lime.
And behind the scenes, there’s even more to celebrate — we’re welcoming new team members to SLO Veg! Our in-house box assemblers and new delivery drivers are busy training to make sure every order is packed with care and delivered with a smile. We’re grateful for their energy and enthusiasm as we continue to grow together.
