Turnips don’t get nearly enough of the attention they deserve. They’re a tasty little root vegetable with a subtly sweet flavor that is really brought out during roasting. Toss them in butter and herbs and you’ve got yourself a wonderful appetizer or side dish.

Ingredients
- 2 pounds turnips (tender leaves reserved), peeled and cut in half
- 3 tablespoons unsalted butter, browned
- 1 tablespoon thyme leaves, chopped
- 1½ teaspoons sugar
- ½ teaspoon salt
- 1 clove garlic, minced
- 3 tablespoons olive oil
- turnip greens, roughly chopped
- salt and pepper
