Air Fryer Kohlrabi Fries With Herb Aoili

2 lbs. 4 ounces Kohlrabi, tops removed, peeled, cut into
1 tablespoon Lone Oak Olive Oil
1/2 inch wide kohlrabi pieces
1 teaspoon garlic powder 1 teaspoon onion powder 1/4 teaspoon smoked paprika
1/4 teaspoon cumin powder
1 teaspoon Himalayan pink salt
1 teaspoon freshly ground black pepper corns

In a large mixing bowl, add the prepared Kohlrabi pieces, add the olive oil, salt, onion powder, garlic powder, smoked paprika, cumin and black pepper. Mix to combine.

Turn the air fryer to 400°F. Add the prepared Kohlrabi and set to 30 minutes. Halfway through cooking, toss the pieces, so that they cook evenly and pull out pieces that are cooked first. The time may differ between different air fryers. Make sure to check the Kohlrabi pieces when they are close to being done, so they don’t burn.

Herb Aioli Sauce:

2 tablespoons fresh lime/lemon juice
1 garlic clove, grated
1 cup vegan mayonnaise
2 tablespoons finely chopped fresh herbs, such as parsley, chives, basil, tarragon, dill and/or chervil

In a medium bowl, combine lemon juice and garlic. If you have the time, let it sit for 5 minutes (this will mellow out the garlic and improve its healing compounds). Whisk in mayonnaise and chopped herbs (I prefer to do a mix of at least 2 herbs—you can use whatever you like or have!). Season with salt and pepper to taste.
