Eating flowers helps mood being a known natural antidepressant, they are anti-fungal, antiviral, helps your immune system help itself, they carry nutrients too! They allow us to connect to some thing around you, life and nature, yourself.

Chaparral Gardens Story

Our first vinegar was developed accidentally in 2005 when there was an overabundance of raspberries. The vinegar was for Christmas and the response of our friends and family was amazing. We then placed some on our farmers market stand and were never able to have enough.

Chaparral Gardens Artisan Vinegars start with hand selected, hand picked fruits, herbs, and vegetables grown on our organic farm. The fruits and herbs are placed in small vats along with an organic Kosher base vinegar.

Our vinegars are made with love and we hope that you make them a mainstay in your pantry for years to come.

A Behind The Scenes Look At Chaparral Gardens

Chaparral Gardens is 20 acres of natural landscape along with a 2 acres organic farm. Our wonderful micro climate, in the California Central Coast, allows us to grow a wide variety of fruits, herbs, and vegetables. All work to create our products is done by hand, from pulling weeds to hand labeling.
Our Process

Chaparral Gardens Artisan Vinegars start with hand-selected, hand-picked fruits, herbs, and vegetables grown on our organic farm. The fruits and herbs are placed in small vats along with an organic Kosher base vinegar. We add the “Mother” ingredient, developed from the original batches.

Patience is a virtue

The infusion is then taken through a “mild” fermentation process that takes several months to complete.
Two more secret steps are taken to ensure the flavors are locked in before our products are bottled up and ready to eat. Time and patience are the key to the success of our flavors.

Ole’ Mole Balsamic Vinegar

Ole’ Mole is a 2018 Good Food winner. We spent over a year working with spices and various forms of chocolate. Finally we feel we have what is the perfect blend. Great poured over chicken in the final minutes of a stir fry. Taco salads, chili, rice and beans will not be the same. 375 M.

Ingredients: California Balsamic with various chilis, ginger, oregano, cinnamon, cumin and spices. Warm but not spicy hot.

Meyer Lemon & Kiwi Pie

Cashews raw, 1 ½ cups
soaked 4 hours, or overnight is even better!
1 tablespoon Meyers lemon zest
3/4 cup freshly squeezed lime juice
1 Avocado peeled and seeded
3/4 cup Organic coconut sugar
1/2 cup coconut cream unsweetened
1/3 cup Coconut oil extra-virgin soft
1/2 tsp Vanilla extract
1/8 tsp Sea salt
4 ripe Kiwifruit

Add the Meyers Lemon juice to the blender.
Drain and rinse the soaked cashews, add them to the blender, along with the zest, avocado, sugar, coconut milk, coconut oil, vanilla, and salt. Puree until smooth, scraping down the sides of the blender as needed.
Pour the filling into the prebaked pie crust of your choice. I love making my own piecrust using any standard recipe but adding my own flair of 1/2 teas rose powder, 1/8 cup pecans and walnuts, Yum! Freeze until firm, about 4 to 5 hours or overnight. The filling holds it’s shape refrigerated but sometimes I just can’t wait to eat this incredibly aromatic pie!

To serve I like slicing the Kiwi about 1/8 inch thick, adding it to the pie along with a beautiful flower from my garden. As you eat your senses come alive to the delicious aromas of the Meyer lemon, Kiwi and the beautiful fragrant flower.
Pure bliss in a slice of pie!
