Happy National Spinach Day!

Each year, on March 26th, our nation celebrates National Spinach Day as a tribute to this nutrient-packed, delicious leafy green vegetable. Spinach is an incredibly versatile vegetable and there are countless ways for it to be enjoyed.

The earliest known records of the spinach plant, also known as the “Persian vegetable” at the time, were found in China where it had been introduced by Nepal. Today, the United States is the world’s second-largest producer of spinach, just behind China. California, Arizona, and New Jersey are the top spinach-producing states in the United States.

~ During her reign as queen of France, Catherine de Medici enjoyed spinach so much, it was served at every meal. To this day, dishes made with spinach are known as “Florentine” reflecting Catherine’s birth in Florence. ~

Reasons to Love Spinach
It can be eaten raw or cooked!
Spinach is one of the best sources of iron.
Spinach is an excellent source of calcium, folic acid, fiber, protein, calcium and vitamins A, C and K.
Spinach is loaded with cancer-fighting antioxidants
It is believed to help improve cardiovascular and gastrointestinal health.

Types of Spinach
Savoy: dark green color with curly leaves; usually sold in fresh bunches.
Flat or Smooth Leaf: broad, smooth leaves; mostly grown for canned and frozen spinach as well as soups, baby food and processed foods.
Semi-savoy: a hybrid variety with crinkly leaves: is sold fresh and processed.

You can find us celebrating #NationalSpinachDay all week long! Shake up you veggie routines this week and experiment with this awesome leafy green. Here are some of our favorite spinach recipes:
Base for a delicious salad such as this one with strawberries and balsamic!
Added to pizza or pasta, such as this prawn spaghetti.

You can also plant some spinach in your spring garden. Not only will you reap the benefits of a lush green salad, but spinach doesn’t require much space.
