Healthy & Delicious Paired Harvest Recipes:

This Week’s Fresh Fish:

Thresher Shark
Alaskan Cod fillets for non-shark subscribersI had the privilege of speaking with Aaron with Giovanni’s Fish Market today to learn more about shark and how to share preparing it.  Aaron grew up fishing for years with his dad in San Diego. When preparing fresh shark, he always recommends soaking the shark steaks in buttermilk (or) milk for several hours prior to cooking. Soaking prior enhances the fish and takes out any aftertaste, while offering a clean finish with every bite.  It’s not necessary but recommended. After soaking you’re welcome to rinse, or go ahead and bread it with the milk on.

Aaron loves his shark pan sautéed, poached, breaded and baked, breaded and fried, or grilled with veggies shish-kabob style. Thresher shark is not a common fish we’ll get to offer you!  We hope you enjoy this week’s treat.  Bon Appetit.

Grilled thresher shark – The Stay at Home Chef
In a shallow dish, soak the thresher shark in the milk for 30-60 minutes. 2. Remove the shark from the milk and rinse it under cold water. 3. In a new dish, squeeze the lemon juice over the shark steaks and pour soy sauce and vinegar over. Season with ginger, red pepper flakes, and garlic powder, turning so that both sides are coated.

Fish is supplied by Giovanni’s Fish Market and Grotto in Morro Bay

It’s So Easy ~ Enjoy Making Your Own Vinaigrettes!

As for how to use your vinaigrettes, don’t feel limited to lettuce. Your salad dressing can also be a great quick marinade for meat, seafood, or vegetables. Or serve your vinaigrette with bread for dipping, drizzle it over sliced fresh tomatoes and mozzarella, use it as a sauce for steamed artichokes, or toss with roasted or grilled vegetables like asparagus, potatoes, eggplant, and summer squash.  Here at SLO Veg we also love drizzling a balsamic glaze on top of our ice cream with fresh berries. It’s so darn good. How to make vinaigrette from super basic to extra fancy shared from Epicurious click >here

PARTNERED ARTISAN CHAPARRAL GARDENS

Chaparral Gardens is 20 acres of natural landscape along with a 2 acres organic farm. Our wonderful micro climate, in the California Central Coast, allows us to grow a wide variety of fruits, herbs, and vegetables. All work to create our products is done by hand, from pulling weeds to hand labeling.Chaparral Garden’s started their vinegar by accident when in 2005 they wound up with an overstock of raspberries. They made some vinegar for friends and family as gifts and to their surpise received amazing praise. They decided to start selling at their farmers market stand and popularity soared there, as well.

Each bottle of vinegar starts with hand selected, hand picked fruits, herbs, and vegetables grown on their small organic farm. The fruits and herbs are placed in small vats along with an organic Kosher base vinegar.

Our balsamic vinegars are made with an artisan’s care at our California garden. Our Blackberry Balsamic is a sofi™ Gold Award winner, while our other balsamic flavors are sure to provide a unique taste your palette has yet to experience. Our Champagne Mimosa and Pacific Spice are both sofi™ Award winners. They are all gluten free.

Chaparral Gardens vinegars are made with love and we hope that you make them a mainstay in your pantry for years to come.

SLO Veg offers quite a nice variety of fruit and balsamic vinegars we believe you’re sure to love.
