Semi-homemade Upside Down Citrus Cake:
(makes 2 round cakes)

Ingredients:
-1 box of yellow cake mix (plus eggs, oil, or butter as per directions on boxed cake mix)
-1/2 cup butter
-4-6 tb brown sugar
-zest from 1 or 2 oranges
-4 oranges, peeled and sliced thin (I used a combination of blood oranges, cara cara oranges, and mandarins.)
Directions:
1. Preheat oven to 350. Put 1/4 cup of butter into the bottom of 2 round cake pans. Place the pans in the oven while it is preheating to melt the butter.
2. Once the butter is melted, whisk in 2-3 tb brown sugar into each round cake pan. Mix well.
3. Meanwhile, prepare cake mix per box instructions and add in the zest of one or two oranges.
4. Prep the citrus by peeling or cutting off the peels and slicing into thin rounds. Place the thin rounds on the bottom of each cake pan on top of the butter sugar mixture.
5. Pour cake mix evenly over each round pan (1/2 the batter for each), and cook according to cake package instructions.
6. When the cakes are finished cooking, carefully flip each cake over onto a plate or cake stand to reveal the citrus bottom. Enjoy!
