Soyrizo Stuffed Baked Sweet Potatoes:

Ingredients:
-2 sweet potatoes or yams, washed
-1 package of soyrizo (or chorizo if not doing plant based0
-1 bag frozen corn
-1/2 yellow or sweet onion, diced
-1 bell pepper (any color), chopped
-1 can black beans, rinsed and drained
-1/2 cup green salsa
-1/2 cup shredded cheddar
-2 tb olive oil
-1 tb ground cumin
-salt and pepper to taste
toppings:
-sour cream or crema
-hot sauce and or salsa
-chopped green onions or fresh cilantro
Directions:
1. Bake sweet potatoes until fork tender. I like to do this in the airfryer at 400 degrees for 40 -45 min. Simply pierce washed sweet potatoes with a fork and spray with avocado oil and coarse salt prior to baking or air frying.
2. Meanwhile, saute onion and soyrizo in a large saute pan. Add in olive oil and chopped bell pepper. Season with cumin, salt, and pepper.
3. Stir in black beans and defrosted corn. Cook until veggies and soyrizo are browned. Pour in green salsa and stir to combine. Turn off heat and set aside.
4. Preheat oven to 350. Once Sweet Potatoes are fork tender, slice each one in half and fluff insides with a fork. Pour the soyrizo veggie topping over the top of the sweet potatoes. Top with cheddar cheese and bake at 350 for 10-15 min or until the cheese is melted and golden brown. (There will be leftover filling. This filling is great with eggs for breakfast or as an easy lunch with tortillas or chips)
